TECHNOLOGIES ARE KNOWN IN FOOD: WHAT WE WILL EAT AFTER 10 YEARS
The next revolution is taking place in the food industry: the process of subordinating microorganisms and molecules to the latest technologies. Meat substitutes indistinguishable from the true product, food with a controlled amount of protein and carbohydrates already exist. They will become a mass product soon, promised EFKO Innovation CEO Andrei Zyuzin in his speech at the Open Innovations Forum.
Thanks to breakthrough technologies, the culture of food consumption will radically change in 10 years. In the field of new product manufacturing, the most serious shifts are taking place. Molecular chemistry, genetic engineering, additive technologies that allow printing food on special printers, today determine the development of the food industry.
“Now in the food technology there are developments in two directions. The first is how to make safe everything new that we have learned to release. The second is how to reduce the cost of the same. For example, one of the manufacturers has already reduced the cost of beef grown from molecules from more than 300 thousand dollars to two thousand. And it is not the limit”, said Andrei Zyuzin.
Experts predict that by 2029 a significant share of animal meat will be replaced by vegetable one and that produced by fermentation method. In business, the new food revolution will lead to a shift from the mass production of food in large factories to small enterprises that will produce products for personalized needs.
